Guess who is back??? I know, I know, its been a while... please forgive me. Life and work has consumed my life. Its not all bad though, recently welcomed my second daughter Reese Makhele, what a blessing!

So, as you have guessed I am on maternity leave, YAY! I have decided to give my blog some well needed attention. After almost a life time here is a twist on a very South African staple as the first post for 20-4-me (2014).

Pap Tert (Otherwise also known as a pap pizza)




What you would need:

Baking tray (or any oven proof dish)
Freshly cooked pap (Maize meal)
Grated cheddar cheese
Oil
1 Onion
Tsp Garlic
Chopped tomatoes
Corn (the kernels)
Spinach
salt, pepper and sugar to taste

Add pap to the baking tray, using some cling wrap or wax paper, level out the pap to form the base of the pap tert.

For the tomato chutney: Saute onions and garlic in some oil in a sauce pan . As soon as the onions start to brown, add the spinach and mushrooms. Place chopped tomatoes into the pan and add some salt.pepper and sugar to taste and cover until tomatoes are soft. Lastly add the corn to the pan and simmer.

Evenly spread the tomato chutney on top of the pap base. to finish off the dish add grated cheddar cheese to the tert and bake in the oven until cheese has melted. Remember all the ingredients has been cooked so no need to cook it again :-)

This is a hit when having braai's!! Enjoy

Tip: you can practically use anything for the topping, its up to you :-)

My indulgence....when he is gone

What better way to comfort myself when He is gone.....Than food!!!!

I always indulge in my favorite dishes and I would like share my favorite dishes to make.

Quick and easy chicken breasts with spinach and feta filling ..mmmmm (mouthwatering)

If you dont mind i would like to share the recipe with you....

Here are your ingredients
4 chicken breasts
Feta
Spanich
salt and pepper to taste
chicken string
Beacon streaky
Butter

Firstly, lightly rinse the breasts and cut in half.Then with a meat pounder (a roller pin would do) pound the breasts slightly. Lightly season with salt and pepper.
Then add the filling of spanich and feta (any other filling would do)
Then put your rolling skils to the test and tightly roll the breast. Complete the roll by covering the chicken with the streaky beacon.

                                     

Then lastly tie the chicken up to ensure that all contents remain inside with the all purpose kitchen string and bake inthe oven until golden brown at about 130 degrees

Travelling can be a really awesome experiance for anyone. Not only do you get to explore the world but you also get to expose yourself to the vast cultures that the world has to offer. (Not to mention the omnifarious cusines the countries have to offer)

This is all good and exciting when your the one travelling and not the one standing at the departure gates looking on as your loved one leaves :-(
